Roving Sommelier loves fortified wines, especially the iconic Sherries produced in Andalusia in Southern Spain. Here, there are three main towns that make up “The Sherry Triangle” where sherries are produced. This Fino – a form of dry Sherry – is produced at Bodegas Lustau located in the coastal town of El Puerto de Santa Maria.

Iconic Sherry producer, Emilio Lustau first came onto my wine radar back in the day in the mid-1990s when I was working at Oxo Tower Restaurant in London. Being originally from Bristol, I have grown up with Sherry and I love all its different styles, tastes, and flavours, and especially Sherry’s wonderful food-friendliness. I have also visited the Sherry region many times over the years, and Lustau has become one of my all-time favourite bodegas.

This wine is aged in El Puerto de Santa Maria, on the Atlantic coast of southern Spain. Pale straw colour, with a yeasty nose, and crisp, fresh notes on the palate. A highly aromatic white wine truly deserved to be discovered.

Perfect served well-chilled as an aperitif with almonds and olives and/or with seafood, sushi, and tapas dishes.

Grape Variety: 100% Palomino Fino

Flavour Profile: Clean, Fresh, Bone-dry, Aromatic, Yeasty, Nutty. Great with all kinds of appetisers and tapas dishes, including gazpacho and seafood especially prawns, oysters, langoustine, sardines, and smoked salmon.
