Pedro Ximénez (also known as PX and many other variations) is the name of a white Spanish wine grape variety grown in several Spanish wine regions, but most notably in the Denominación de Origen (DO) of Montilla-Moriles in Andalusia.

Bodegas Alvear is one of the oldest family-owned wineries in Spain and are rightly famous for their sweet nectars. Here it is used to produce a varietal wine, an intensely sweet, dessert sherry-style wine. It is made by drying the grapes under the hot sun, concentrating the sweetness (in a similar way to straw wine production), which are then used to create a thick, unctuous liquid with a strong taste of raisins, figs, coffee, and butterscotch that is normally lightly fortified and aged in a special solera dating back to 1927. This one is fragrant and extremely concentrated and has been produced from a blend of several vintages and aged for many years before bottling. Perfect with desserts and cakes and proper vanilla ice cream or dark chocolates.
