Roving Sommelier is passionate about premium quality Australian regional wines. Penfolds is many wine lovers’ favourite Aussie winery and has developed a fine reputation internationally, especially with connoisseurs of iconic Australian vineyards. Penfolds “Bin 707” Cabernet Sauvignon is one of Australia’s most prestigious red wines and is highly revered worldwide.

Penfolds “Bin 707” is widely regarded as benchmark Australian Cabernet Sauvignon. A full-bodied wine with incredible depth, complexity and structure, the palate offers great intensity and concentration of varietal flavour, balanced by a finely integrated oak character from 14 months maturation in small new American oak barrels. With careful cellaring Penfolds “Bin 707” will mature in bottle for many years. During maturation natural sediment may form in this bottle – an entirely natural feature of this wine’s gradual development.

This one has evolved beautifully and is a very memorable wine that deserves to be enjoyed on very special occasions with sumptuous food. I suggest you decant this wine at least one hour before service. Best enjoyed with red meats and game dishes and in a convivial atmosphere.
