Roving Sommelier is passionate about premium quality regional Spanish wines. In my humble opinion, Pazo Señorans produces the finest of all Spanish Albariños, and is effectively the benchmark of Spain’s most iconic white wine grape, to which most winegrowers aspire. It is a family-owned winery that produces super-premium Albariño wines in the sub-region of Val de Salnés, (D.O Rias Baixas), in the province of Galicia, Northwest Spain. Arguably, this is the quintessential home to the iconic Albariño grape, and also home to this wonderful winery. I first started buying wines from this lovely bodega way back in 2000, when I was wine buyer and head sommelier at 3-star Michelin restaurant La Tante Claire in London, and I’ve been following them ever since. Their intensely flavoured wines are always made only from the finest Albariño grapes, hand-selected from the best vineyard locations. After fermentation, the wine is aged on its lees (sobre lias) for a few months to add depth, character, and texture.

This Albariño is crisp, dry, and fresh with lovely, subtle fruity aromas. Best enjoyed chilled and a great partner to seafood.
